Ingredients Â
- 2 cups turkey breasts Granny’s Boneless, Skinless, roasted and shredded
- 1 tbsp canola oil
- 1 cup yellow onion finely chopped
- 1½ cups tomatoes seeded and coarsely chopped (not roma)
- 2 tbsp jalapeño seeded and finely chopped
- 1 tbsp garlic finely chopped
- 1 tsp ground cumin
- 1 tsp chili powder
- 2 tsp paprika
- 8 cups turkey stock homemade or low sodium
- 1 cup corn kernels fresh or frozen
- 1 tsp dried oregano
- 1 tsp sea salt
- ¼ tsp freshly cracked black pepper Â
- 2 tbsp fresh lime juice
To Serve
- ½ cup sour cream
- 1 cup Monterey Jack cheese shredded
- ¼ cup cilantro chopped
- 2 cups tortilla chips crushed
- ½ cup avocado diced
- 1 lime cut into wedges
Instructions

In a soup pot over medium-high heat, sauté onion, tomatoes and jalapeno in oil until fragrant, about 5-8 minutes.

Add garlic, cumin, chili powder and paprika and sauté for an additional 2 minutes.

Add stock and corn then bring to a simmer for 10 minutes. Stir in turkey, oregano, lime juice, salt and pepper and return to summer for 5 minutes.

Serve with sour cream, cheese, cilantro, tortilla chips, avocado and lime.
