Turkey Tortilla Soup

Ingredients
  

  • 2 cups turkey breasts Granny’s Boneless, Skinless, roasted and shredded
  • 1 tbsp canola oil
  • 1 cup yellow onion finely chopped
  • cups tomatoes seeded and coarsely chopped (not roma)
  • 2 tbsp jalapeño seeded and finely chopped
  • 1 tbsp garlic finely chopped
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 tsp paprika
  • 8 cups turkey stock homemade or low sodium
  • 1 cup corn kernels fresh or frozen
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • ¼ tsp freshly cracked black pepper  
  • 2 tbsp fresh lime juice

To Serve

  • ½ cup sour cream
  • 1 cup Monterey Jack cheese shredded
  • ¼ cup cilantro chopped
  • 2 cups tortilla chips crushed
  • ½ cup avocado diced
  • 1 lime cut into wedges

Instructions
 

  • In a soup pot over medium-high heat, sauté onion, tomatoes and jalapeno in oil until fragrant, about 5-8 minutes.
  • Add garlic, cumin, chili powder and paprika and sauté for an additional 2 minutes.
  • Add stock and corn then bring to a simmer for 10 minutes. Stir in turkey, oregano, lime juice, salt and pepper and return to summer for 5 minutes.
  • Serve with sour cream, cheese, cilantro, tortilla chips, avocado and lime.
