Ingredients  

  • 8 slices turkey bacon Butterball Rasher
  • 1 lb new potatoes halved and grilled
  • 1 ½ cups spinach
  • 2 corn on the cob grilled and cut off the cob
  • ½ bunch scallions finely sliced
  • ½ cup Parmigiano-Reggiano cheese freshly grated
  • 1 tbsp grainy Dijon mustard
  • 1 tbsp honey
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • salt and pepper

Instructions

  • In a large bowl, whisk together the mustard, honey, lemon juice, and olive oil. Season with salt and pepper to taste then set aside.
  • Next, preheat your greased grill to medium-high heat.
  • Add the bacon and grill for 2-3 minutes per side, or until crispy and golden. Remove from the grill.
  • Coarsely chop the bacon. Add the potatoes and chopped bacon to the bowl with the dressing, followed by the spinach, corn, and scallion. Toss in the dressing, then transfer to your serving platter.
  • Top with some of the freshly grated cheese and enjoy!
