Ingredients  

Garnishes

  • 120 g smoked turkey breast diced
  • 2 cups assorted vegetables broccoli florets, bell peppers, dried tomatoes, olives, mini tomatoes, mushrooms, onions
  • 1 tbsp olive oil

Mini Quiches

  • cup milk
  • 2 tbsp flour
  • 6 eggs
  • 1 cup firm cheese grated – cheddar, mozzarella, Swiss, etc.

Instructions

Preparation of garnishes:

  • Cut the vegetables into small cubes or bunches (broccoli).
  • Blanch the bunches of broccoli for 1 minute. Drain and set aside.
  • Caramelize the onion in the olive oil for 5 minutes, then add the mushrooms. Continue cooking for 5 minutes.
  • If desired, brown the bell pepper for 2 to 3 minutes.

Preparation of the mini quiches:

  • Preheat the oven to 350°F.
  • In a large measuring cup or bowl, combine milk and flour.
  • Add the eggs and whisk again with a fork until the flour is completely dissolved.
  • Fill half of the cavities of a non-stick muffin mold or if not non-stick, oil or butter the mold.
  • Distribute the smoked deli turkey in each cavity.
  • Add the vegetable garnish, about 3 Tbsp per cavity.
  • Using a fork, slightly mix the garnish in the egg mixture.
  • Top with grated cheese.
  • Cook in the oven for 30 minutes or until the egg mix is firm in the center.
  • Plan for 1 to 3 mini quiches per portion, depending on appetite.
