Instructions
Preparation of garnishes:
Cut the vegetables into small cubes or bunches (broccoli).
Blanch the bunches of broccoli for 1 minute. Drain and set aside.
Caramelize the onion in the olive oil for 5 minutes, then add the mushrooms. Continue cooking for 5 minutes.
If desired, brown the bell pepper for 2 to 3 minutes.
Preparation of the mini quiches:
Preheat the oven to 350°F.
In a large measuring cup or bowl, combine milk and flour.
Add the eggs and whisk again with a fork until the flour is completely dissolved.
Fill half of the cavities of a non-stick muffin mold or if not non-stick, oil or butter the mold.
Distribute the smoked deli turkey in each cavity.
Add the vegetable garnish, about 3 Tbsp per cavity.
Using a fork, slightly mix the garnish in the egg mixture.
Top with grated cheese.
Cook in the oven for 30 minutes or until the egg mix is firm in the center.
Plan for 1 to 3 mini quiches per portion, depending on appetite.
