Ingredients Â
- 1 cup onion diced
- ½ cup carrot diced
- ¼ cup celery diced
- 2 cups apples peeled, cored & chopped
- 2 cups butternut squash peeled & chopped
- 2 tbsp garlic diced
- 1 lb ground turkey cooked, sauteed in oil
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp dried oregano
- ¼ tsp salt
- ¼ tsp freshly cracked black pepper Â
- 1 can chicken stock 284 mL, undiluted
- 1 can light coconut milk 400 mL
- 2 tbsp tomato paste
- 1 cup black beans drained and rinsed
Instructions

Combine everything in your slow cooker and cook on low for 6-8 hours.

Garnish with fresh cilantro, if you like.
