Ingredients  

Mixture for meat

  • 2 lbs ground turkey
  • 1 egg
  • ½ cup panko breadcrumbs
  • 15 ml garlic powder
  • 15 ml onion powder
  • 2.5 ml freshly cracked black pepper  
  • 2.5 ml Himalayan sea salt
  • 20 ml dried oregano
  • 5 ml smoked paprika
  • 12 small wooden skewers

Garnish

  • 1 head iceberg lettuce cut into strips
  • 4 tomatoes cut into small cubes
  • ½ red onion cut into small pieces
  • 12 medium tortillas
  • 1 bunch flat-leaf (Italian) parsley leaves chopped

Donair sauce

  • 1 can condensed milk 300 ml
  • â…“ cup white vinegar
  • 1 tsp garlic powder

Instructions

Meat mix:

  • Mix all the meat ingredients with the turkey and let stand in the refrigerator for a few hours (12 hours for best results).
  • Divide the meat into 12 equal parts and then shape them onto the skewers.
  • Preheat the Big Green Egg to 375 F.
  • Cook small skewers for about 20 minutes or until internal temperature reaches 165 F internally, turning often.
  • Heat/Grill tortillas on the BBQ just prior to serving.

Donair sauce:

  • Combine all the ingredients and let stand a few hours in the refrigerator until ready to serve.

Final presentation:

  • Assemble all the ingredients on a board going in the middle of the table. The can then make their donair tacos   in their own way.

Tips & Tricks

To prevent meat from sticking to your hands when shaping the skewers, soak your hands in cold water.
