Ingredients  

  • 1 whole turkey cut into pieces
  • 1 cup dijon mustard
  • ½ cup maple syrup
  • 3 tbsp oil
  • 1 onion cut into pieces
  • 2 leeks cut into pieces
  • 3 carrots cut into pieces
  • 3 stalks celery cut into pieces
  • 5 cloves garlic cut in half
  • ¾ cup chorizo diced
  • 3 sprigs rosemary
  • 5 leaves sage
  • 1 l vegetable stock or poultry stock
  • 1 l beer
  • salt and pepper

Instructions

  • Preheat oven to 350ËšF.
  • In a bowl, combine mustard and maple syrup.
  • Pour the mustard mixture over the turkey pieces and toss.
  • In a large skillet, heat oil and sear each piece of turkey.
  • Place turkey pieces in roasting pan with onion, leeks, celery, garlic, chorizo, rosemary, sage, broth and beer.
  • Season with salt and pepper.
  • Cover and bake for two hours.
