Instructions
Preheat oven to 350˚F.
In a bowl, combine mustard and maple syrup.
Pour the mustard mixture over the turkey pieces and toss.
In a large skillet, heat oil and sear each piece of turkey.
Place turkey pieces in roasting pan with onion, leeks, celery, garlic, chorizo, rosemary, sage, broth and beer.
Season with salt and pepper.
Cover and bake for two hours.
