Ingredients  

  • 1 turkey thigh boneless, approx. 1 ½ – 1 ¾ lb
  • salt and pepper to taste
  • 12 oz pizza dough
  • ¼ cup flour
  • 1 cup bocconcini cheese cut in pieces
  • â…“ head cauliflower finely sliced or chopped
  • 1 medium onion yellow or red, minced
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 ½ cups poultry broth

Spice Mix

  • 1 tsp paprika
  • 1 tbsp onion powder
  • ¾ cup green peas blanched in hot water

Instructions

  • Preheat the oven at 400°F.
  • Cut the turkey thigh in pieces. Put in a pot and add enough water to cover. Add salt and pepper. Bring to a boil and cook at medium heat for 15-18 minutes. Drain and let cool. Shred the meat using two forks.
  • Roll the pizza dough with the ¼ cup of flour until you get the desired thickness. You can make 2 pizzas with the same amount of dough. Garnish the dough with the cheese, pulled turkey, cauliflower, onion, a drizzle of oil, salt and pepper. Cook in the oven at 425°F for 18-20 minutes.
  • While the pizza cooks, heat butter in a pot at medium-high heat. Once the butter is foamy, add 1 tbsp flour, mix and cook until the dough becomes golden, around 3 minutes. Add the broth and the spices and whip until the sauce becomes thick and smooth. Add salt and pepper. Let the sauce simmer at low heat until the pizza is ready.
  • Garnish your pizza with sauce and green peas.
