Ingredients Â
- 1 lb turkey thighs Granny’s, roasted and chopped
- 4 strips bacon chopped
- 1 cup yellow onion chopped
- ½ cup carrots peeled and chopped
- 1½ cups russet potatoes peeled and cut small
- 1 tsp sea salt
- ¼ tsp freshly cracked black pepper Â
- 6 cups homemade turkey stock or chicken stock
- 2 tsp dried thyme leaves
- 1½ cups half and half cream
- 1 cup frozen kale
Instructions

Heat the bacon in a soup pot over medium high heat until crispy.

Add onion, carrots, russet potatoes and salt and pepper. Cook for 5 minutes. Add roasted turkey.

Add turkey stock and dried thyme leaves. Cook for 15 minutes or until potatoes are tender.

Add half and half and frozen kale. Bring back to a slow simmer and cook for 3 minutes. Serve warm.
