Mexican Turkey Shells

Ingredients  

  • 1 lb ground turkey
  • 5 green onions chopped
  • ½ cup onion finely chopped
  • 1 tsp oregano
  • 1 clove garlic minced
  • ½ tsp salt
  • 1 cup ricotta cheese
  • 18 large pasta shells uncooked
  • 3 cups salsa mild or hot
  • 1 ½ cups mozzarella cheese grated, reduced fat if preferred

Instructions

  • Bring shells to a boil in salted water then rinse under lukewarm water.
  • In a bowl, mix turkey, green onions, garlic, oregano and salt.  Add Ricotta cheese.  Stuff each shell with turkey mixture.
  • In a 2-quart (2.5 L) baking dish, pour 2 cups (500 mL) of salsa.  Place stuffed shells on top of salsa.  Spread the rest of the turkey mixture and salsa on top of shells.
  • Cover with aluminum foil and bake at 350ºF (180ºC) for one hour.
  • Sprinkle with Mozzarella cheese, recover and let sit for 10 minutes before serving.
