Ingredients  

  • 2 tbsp avocado oil
  • 1 medium sweet potato diced
  • 454 g ground turkey
  • ½ yellow onion diced
  • 12 eggs
  • 2 cups spinach
  • ½ tsp sea salt
  • ¼ tsp black pepper

Instructions

  • Preheat the oven to 400F°/200C°.
  • Place the diced sweet potatoes in a casserole dish along with 1 Tbsp of avocado oil and bake for 25 minutes.
  • Meanwhile, place a pan on medium heat with 1 Tbsp of avocado oil and sauté the ground turkey.
  • Once the ground turkey is cooked through, add in the diced yellow onion and sauté for a few more minutes.
  • Crack all 12 eggs and whisk together in a bowl.
  • Once the sweet potatoes are done, add in the turkey mixture, spinach and whisked eggs.
  • Give everything a good mix, then top with salt and pepper.
  • Bake in the oven for 20-25 minutes.

Serve with hot sauce and fresh cilantro!
