Instructions
Preheat the oven to 400F°/200C°.
Place the diced sweet potatoes in a casserole dish along with 1 Tbsp of avocado oil and bake for 25 minutes.
Meanwhile, place a pan on medium heat with 1 Tbsp of avocado oil and sauté the ground turkey.
Once the ground turkey is cooked through, add in the diced yellow onion and sauté for a few more minutes.
Crack all 12 eggs and whisk together in a bowl.
Once the sweet potatoes are done, add in the turkey mixture, spinach and whisked eggs.
Give everything a good mix, then top with salt and pepper.
Bake in the oven for 20-25 minutes.
Notes
Serve with hot sauce and fresh cilantro!
