Ingredients Â
- 1 lb turkey breast
- ½ cup olive oil
- 3 tbsp balsamic vinegar
- 2 tbsp lime juice
- 1 tbsp dijon mustard
- 1 tbsp ground cumin
- 2 tsp hot pepper sauce
- ½ tsp salt
- ¼ tsp freshly cracked black pepper Â
- 1 can black beans 540 mL, drained and rinsed
- 1 ½ cups frozen corn kernels thawed
- 2 red bell peppers
- 3 green onions chopped
- ¼ cup cilantro chopped
Instructions

In a small bowl, whisk together olive oil, vinegar, lime juice, Dijon mustard, cumin, hot pepper sauce, salt and pepper.

Place turkey in a non-metal bowl or pan and pour half of the olive oil mixture over the turkey, coating it on all sides.

Reserve remaining olive oil mixture until ready to use. Cover and refrigerate 1 hour or overnight.

Preheat grill to medium high. Grill marinated turkey pieces for 4-5 minutes per side, or until cooked through.

Slice turkey into thin strips and in a large bowl mix it with black beans, corn, red pepper and green onions.

Pour reserved olive oil mixture on top of mixture, stirring in cilantro. Serve immediately or refrigerate until ready to serve.
