Black Bean Turkey Salad

Ingredients  

  • 1 lb turkey breast
  • ½ cup olive oil
  • 3 tbsp balsamic vinegar
  • 2 tbsp lime juice
  • 1 tbsp dijon mustard
  • 1 tbsp ground cumin
  • 2 tsp hot pepper sauce
  • ½ tsp salt
  • ¼ tsp freshly cracked black pepper  
  • 1 can black beans 540 mL, drained and rinsed
  • 1 ½ cups frozen corn kernels thawed
  • 2 red bell peppers
  • 3 green onions chopped
  • ¼ cup cilantro chopped

Instructions

  • In a small bowl, whisk together olive oil, vinegar, lime juice, Dijon mustard, cumin, hot pepper sauce, salt and pepper.
  • Place turkey in a non-metal bowl or pan and pour half of the olive oil mixture over the turkey, coating it on all sides.
  • Reserve remaining olive oil mixture until ready to use. Cover and refrigerate 1 hour or overnight.
  • Preheat grill to medium high. Grill marinated turkey pieces for 4-5 minutes per side, or until cooked through.
  • Slice turkey into thin strips and in a large bowl mix it with black beans, corn, red pepper and green onions.
  • Pour reserved olive oil mixture on top of mixture, stirring in cilantro. Serve immediately or refrigerate until ready to serve.
