Ingredients  

  • 400 g Fusilli pasta
  • 450 g turkey breasts cubed
  • ½ tsp garlic powder
  • Salt to taste
  • freshly cracked black pepper   to taste
  • 2 tsp olive oil
  • 1 ½ cup cucumbers halved
  • 200 g feta cheese
  • 1 ½ cup baby tomatoes halved
  • 1 shallot finely chopped
  • 2 cloves garlic chopped

Instructions

  • Bring a large pot of water to boil and cook pasta al dente, according to instructions on package. Drain and set aside.
  • Season turkey with garlic powder, a dash of salt and pepper, and set aside.
  • Heat 1 tsp of olive oil and cook turkey 3 minutes on each side, until cooked through (165o F). Remove from heat and set aside.
  • In a large bowl, put turkey, cucumber, feta, tomatoes, shallot, garlic, 1 tsp olive oil, salt and pepper and stir gently. Adjust seasoning to taste.
  • Serve warm or cold.
