Ingredients  

  • ½ cup egg whites 9 egg whites
  • 2 tbsp pesto
  • ½ cup oven roasted turkey deli meat chopped
  • ¾ cup sundried tomatoes chopped
  • 1 tsp salt
  • ¼ cup Parmigiano-Reggiano cheese grated

Instructions

  • Turn the oven on to 375°F.
  • Mix egg whites and pesto together in a bowl and whisk to combine.
  • Add in the turkey meat and sundried tomatoes and season with salt. Mix well.
  • Spray a nonstick muffin tray, then fill the cups with the mixture.
  • Top with grated Parmigiano-Reggiano cheese and bake (375°F) for 12-15 minutes or until the whites have set.
  • Remove and enjoy while hot.

Tips & Tricks

If you want to make this dish rich and hearty, switch the egg whites for 6-8 whole eggs
