BBQ Turkey Sandwich with Apple Slaw

Ingredients  

  • 1.5 lbs turkey fillets
  • 8 brioche buns or kaiser

Rub

  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper optional

Slaw Dressing

  • 2 tbsp honey
  • 2 tbsp honey mustard
  • 2 tbsp canola oil
  • ¼ cup cider vinegar
  • 1 tsp garlic powder
  • 1 tsp salt

Coleslaw

  • 6 cup coleslaw
  • ½ granny smith apple diced
  • 3 green onions chopped

Instructions

  • Whisk together all rub ingredients.
  • Sprinkle rub over turkey breast, on all sides. Let sit for 10-15 minutes.
  • Meanwhile, in a medium size mixing bowl whisk together all slaw dressing ingredients.
  • Mix coleslaw ingredients into dressing. Cover and refrigerate.
  • Heat barbecue to medium heat.
  • Spray or brush grill with oil.
  • Place turkey breast on grill. After about 10 minutes, turn over and cook until internal temperature reaches 165 degrees F.
  • Once internal temperature is reached, remove from grill, cover with tin foil and let rest for 10 minutes.
  • Slice thinly, against the grain.
  • Assemble sandwich with turkey, coleslaw and your favourite toppings (ie. mayo, mustard, onions, jalapenos, etc.).
