Spaghetti All’Amatriciana with Turkey Ham

Ingredients  

  • 3 tbsp olive oil
  • ½ tsp chili flakes
  • 100 g extra-lean turkey ham butterball, diced
  • 1 red onion cut into 1″ wedges
  • 3 tbsp tomato paste
  • 1 cup passata
  • 1 cup Parmigiano-Reggiano cheese freshly grated
  • 1 cup pecorino cheese freshly grated
  • 175 g spaghetti

Instructions

  • In a large saucepan, heat the olive oil, garlic, and chili flakes over medium.  When the garlic is browned, remove.
  • Add the turkey ham and red onion.  Stir regularly and increase the heat to medium high, cooking for 2-3 minutes.
  • Add the tomato paste and cook for an additional minute, then add the passata.
  • Season with a pinch of salt, then bring up to a gentle boil.  Reduce and simmer the sauce until thickened.
  • Cook your spaghetti in a separate pot of salted water.
  • Add some pasta water to your sauce to loosen, then add the cooked spaghetti directly into your saucepan with the sauce.
  • Add the cheeses, then stir until all is combined.
  • Plate each portion of pasta with pieces of turkey ham, onions, and top with more freshly grated cheese.
