In a large saucepan, heat the olive oil, garlic, and chili flakes over medium. When the garlic is browned, remove.
Add the turkey ham and red onion. Stir regularly and increase the heat to medium high, cooking for 2-3 minutes.
Add the tomato paste and cook for an additional minute, then add the passata.
Season with a pinch of salt, then bring up to a gentle boil. Reduce and simmer the sauce until thickened.
Cook your spaghetti in a separate pot of salted water.
Add some pasta water to your sauce to loosen, then add the cooked spaghetti directly into your saucepan with the sauce.
Add the cheeses, then stir until all is combined.
Plate each portion of pasta with pieces of turkey ham, onions, and top with more freshly grated cheese.
