Spinach Artichoke Dip:

  • 1 cup cream cheese softened
  • ½ cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • ½ cup spinach chopped
  • ½ cup artichokes chopped
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp salt and pepper

Turkey Meatballs:

  • 1 lb ground turkey
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp oregano
  • 1 egg
  • ½ cup breadcrumbs
  • 2 cups tomato sauce
  • 1 tbsp olive oil
  • ½ cup Parmigiano-Reggiano cheese finely grated
  • 1 bunch parsley finely chopped
  • 1 tbsp salt and pepper

Instructions

  • In a large bowl, combine all ingredients for spinach artichoke dip. Mix together until combined and set aside.
  • Add ground turkey to a large bowl. Add all seasonings, egg, and breadcrumbs. Mix together until combined.
  • Take a handful of the meatball mixture and roll into a ball. Press down in the center with your thumb and fill it in with the spinach artichoke dip. Take another handful of the meatball mixture to cover the dip and shape into a meatball. Place on a plate. Repeat.
  • Heat large saucepan over med-high heat with olive oil. Add meatballs to the pan and sear on each side for 1 minute. Reduce heat to low-medium heat and pour tomato sauce into pan. Cover with lid and simmer for 15-20 minutes until meatballs reach internal temperature of 165F.
