Ingredients  

  • 1 ½ cups turkey leftover, Granny’s
  • 4 strips turkey bacon Butterball Applewood Smoked
  • 1 tbsp olive oil
  • 1 cup onion diced
  • ½ cup celery diced
  • 1 tbsp garlic
  • 4 cups chicken stock or turkey stock, homemade or low sodium
  • 2 cups red potatoes peeled and diced
  • 1 can Italian plum tomatoes 796 mL, drained and diced
  • salt and pepper to taste
  • 2 tbsp Italian parsley coarsely chopped

Instructions

  • In a soup pot over medium heat sauté turkey and bacon in oil until golden brown.
  • Add onion and celery and continue to sauté until just soft. Add garlic and continue to cook.
  • Add stock and potatoes and cook until potatoes are soft.
  • Add tomatoes and season with salt and pepper. Bring to a simmer.
  • Add parsley and serve.
