Ingredients  

  • 1 bone-in turkey breast Butterball
  • 2 tsp dijon mustard
  • 2 tsp honey
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 3 tbsp olive oil
  • 2 tsp red wine vinegar
  • 8 slices wholegrain bread
  • 1 head bibb lettuce picked
  • 2 tomatoes sliced
  • 4 slices cheddar cheese
  • cup mayonnaise
  • 2 avocado sliced

Instructions

  • Preheat oven to 375°F/190°C.
  • Combine mustard, honey, oregano, thyme, garlic powder, olive oil, and vinegar in a bowl. Whisk well to combine. Using a pastry brush, apply all over the turkey breast, then transfer to oven.
  • Roast for 45-50 minutes or until the internal temperature reaches 165°F/74°C.
  • Rest turkey for at least 15 minutes, then carve into thin slices for the sandwiches.
  • Build sandwiches by spreading mayo on a slice of bread, then adding lettuce, tomato, and avocado. Top with turkey slices, followed by cheese and a top piece of bread that’s covered in more mayo.
  • Slice and pack for back-to-school lunches!
