Ingredients  

Turkey

  • 1 turkey breasts about 500g
  • salt and pepper to taste

Cilantro Chutney

  • 1 bunch cilantro large
  • 10 sprigs mint
  • 2 cloves garlic
  • 1.5 tsp ground coriander
  • 1 tbsp cumin
  • 1 tsp cinnamon
  • 1 tsp chili flakes
  • â…“ to ½ cup vegetable oil

Sandwich Assembly

  • 8 slices bread
  • 8 slices mozzarella cheese
  • 1 red onion thinly sliced
  • 3 tomatoes thinly sliced
  • 1 English cucumber thinly sliced

Instructions

  • Preheat the oven to 400°F.
  • Season the turkey breast with salt and pepper.
  • Heat a drizzle of oil in a pan over medium high heat. Sear the turkey breast 3-4 minutes on each side. Remove from the pan and place in a baking dish and cover.
  • Bake the turkey breast in the oven for 30-40 minutes, until the internal temperature reads 165°F.  Let stand 10 minutes before cutting into thin slices.
  • Place the ingredients for the cilantro chutney in a food processor.  Mix for 1 minute.  Add salt to taste.
  • Garnish the bread slices with the chutney, turkey slices and the other ingredients.
  • Heat a drizzle of oil in a pan over medium high heat. Cook the sandwich 2-3 minutes on each side until the cheese has melted.
