Turkey Sandwich with Mumbai Inspired Cilantro Chutney

Turkey
- 1 turkey breasts about 500g
- salt and pepper to taste
Cilantro Chutney
- 1 bunch cilantro large
- 10 sprigs mint
- 2 cloves garlic
- 1.5 tsp ground coriander
- 1 tbsp cumin
- 1 tsp cinnamon
- 1 tsp chili flakes
- ⅓ to ½ cup vegetable oil
Sandwich Assembly
- 8 slices bread
- 8 slices mozzarella cheese
- 1 red onion thinly sliced
- 3 tomatoes thinly sliced
- 1 English cucumber thinly sliced
Preheat the oven to 400°F.
Season the turkey breast with salt and pepper.
Heat a drizzle of oil in a pan over medium high heat. Sear the turkey breast 3-4 minutes on each side. Remove from the pan and place in a baking dish and cover.
Bake the turkey breast in the oven for 30-40 minutes, until the internal temperature reads 165°F. Let stand 10 minutes before cutting into thin slices.
Place the ingredients for the cilantro chutney in a food processor. Mix for 1 minute. Add salt to taste.
Garnish the bread slices with the chutney, turkey slices and the other ingredients.
Heat a drizzle of oil in a pan over medium high heat. Cook the sandwich 2-3 minutes on each side until the cheese has melted.
