Ingredients
- 1 ½ cups turkey leftover, Granny’s
- 4 strips turkey bacon Butterball Applewood Smoked
- 1 tbsp olive oil
- 1 cup onion diced
- ½ cup celery diced
- 1 tbsp garlic
- 4 cups chicken stock or turkey stock, homemade or low sodium
- 2 cups red potatoes peeled and diced
- 1 can Italian plum tomatoes 796 mL, drained and diced
- salt and pepper to taste
- 2 tbsp Italian parsley coarsely chopped
Instructions

In a soup pot over medium heat sauté turkey and bacon in oil until golden brown.

Add onion and celery and continue to sauté until just soft. Add garlic and continue to cook.

Add stock and potatoes and cook until potatoes are soft.

Add tomatoes and season with salt and pepper. Bring to a simmer.

Add parsley and serve.
