Ingredients  

  • 2 cups cooked shredded turkey Granny’s
  • 1 tbsp vegetable oil
  • 1 cup onion finely chopped
  • 1 ½ cups fresh tomatoes seeded and coarsely chopped
  • 2 tbsp jalapeño seeded and finely chopped
  • 1 tbsp garlic finely chopped
  • 1 tsp ground cumin
  • 1 tbsp paprika
  • 8 cups turkey stock homemade or low sodium
  • 1 cup corn kernels fresh or frozen
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • ¼ tsp freshly cracked black pepper  

Toppings

  • ½ cup sour cream
  • 1 cup Monterey Jack cheese shredded
  • ¼ cup cilantro chopped
  • 2 cups tortilla chips crushed
  • ½ cup avocado diced
  • 1 lime cut into wedges

Instructions

  • In a soup pot over medium-high heat sauté onion, tomatoes and jalapeno in oil until lightly browned.
  • Add garlic, cumin and paprika and sauté for an additional 2 minutes.
  • Add stock and corn. Bring to a simmer for 10 minutes.
  • Stir in shredded turkey, oregano, salt and pepper.
  • Top with sour cream, cheese, cilantro, tortilla chips, avocado and lime.
