Ingredients  

  • 5.5 lbs turkey thighs and/or Granny’s drumsticks bone-in, skin removed
  • 2 tbsp vegetable oil
  • 1 ½ cups onion finely chopped
  • 2 tbsp garlic finely chopped
  • ¼ cup mild paprika
  • 2 tbsp smoked paprika
  • ¼ tsp ground cloves
  • ¼ tsp freshly cracked black pepper  
  • 1 bay leaf
  • 2 tsp sea salt
  • ½ cup cider vinegar
  • 1 can whole tomatoes 540 mL, low sodium
  • 3 tbsp maple syrup

Instructions

  • Heat oil in a skillet and brown the onion and garlic. Add both types of paprika, cloves, pepper, bay leaf, salt, cider vinegar and maple syrup; bring to a simmer.
  • Drain tomatoes, remove seeds and puree in a food processor; add to the skillet.
  • Place turkey into slow cooker then add all ingredients from skillet and mix well. Place lid on slow cooker then cook on low setting for 6 hours.
  • Let cool, then skim fat off surface.
  • Remove the turkey pieces from the slow cooker and “pull” the cooked meat off the bones by using two forks to shred it. Discard the bones.
  • Mix the meat back in with the sauce and re-warm before serving. Serve on a crusty bun.
