- 5.5 lbs turkey thighs and/or Granny's drumsticks bone-in, skin removed
- 2 tbsp vegetable oil
- 1 ½ cups onion finely chopped
- 2 tbsp garlic finely chopped
- ¼ cup mild paprika
- 2 tbsp smoked paprika
- ¼ tsp ground cloves
- ¼ tsp freshly cracked black pepper
- 1 bay leaf
- 2 tsp sea salt
- ½ cup cider vinegar
- 1 can whole tomatoes 540 mL, low sodium
- 3 tbsp maple syrup
Heat oil in a skillet and brown the onion and garlic. Add both types of paprika, cloves, pepper, bay leaf, salt, cider vinegar and maple syrup; bring to a simmer.
Drain tomatoes, remove seeds and puree in a food processor; add to the skillet.
Place turkey into slow cooker then add all ingredients from skillet and mix well. Place lid on slow cooker then cook on low setting for 6 hours.
Let cool, then skim fat off surface.
Remove the turkey pieces from the slow cooker and "pull" the cooked meat off the bones by using two forks to shred it. Discard the bones.
Mix the meat back in with the sauce and re-warm before serving. Serve on a crusty bun.
