Ingredients  

  • 2 turkey thighs
  • 1 orange zest and juice
  • 1 lime zest and juice
  • 2 cloves garlic grated
  • 2 tbsp white vinegar
  • 1 tbsp achiote paste
  • ½ tsp cumin
  • 2 tbsp oil
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  • Rinse turkey thighs and pat dry.
  • Combine all ingredients and place in a sealable plastic bag. Add turkey thighs, coat well, seal bag and marinate in fridge for 1-4 hours.
  • Grill 10 minutes on each side and then continue cooking on indirect heat for another 5-10 minutes until thighs reach an internal temperature of 165 °F. Cover with aluminum foil and let rest for 10 minutes before slicing and serving.
  • Serve on warm tortillas with your favourite toppings.

Tips & Tricks

One sure way to infuse your tacos with flavours is to marinade the turkey first. At least an hour and longer if possible.
