Ingredients  

  • 3 ½ tbsp butter
  • 8 slices belgium bread
  • 350 g boneless turkey breasts sliced
  • salt
  • freshly cracked black pepper  
  • 2 tbsp cooking oil
  • ½ onion finely chopped
  • 1 cup sweet peppers diced
  • 1 ½ cup baby spinach
  • 2 cups cheddar cheese grated
  • ¼ cup pesto

Instructions

  • Brush butter on both sides of the 8 slices of bread. Set aside.
  • Season turkey with a dash of salt and pepper. Set aside.
  • In a skillet, heat a drizzle of oil at medium-high heat, add turkey and cook on both sides for 2 minutes or until turkey is fully cooked. Transfer in a bowl and set aside.
  • In the same skillet, add a drizzle of oil and cook onion and sweet pepper for 5 minutes, stirring frequently, until caramelized, then transfer in the turkey bowl.
  • Add spinach to turkey and vegetables, mix well and set aside.
  • In the same skillet heated at medium-high, put 2 slices of bread and let brown about 1 minute, then turn and put ¼ of the cheese, ¼ of the turkey mix, some vegetables and pesto on one of the slices. Cover with the other slice of bread.
  • Using a spatula, slightly flatten grilled cheese, turn and cook for another 20 seconds. Remove from skillet and keep warm.
  • Repeat the same process with the 3 remaining grilled cheeses.
  • Cut grilled cheeses in two (see picture).
