Ingredients  

  • 2 cups Iceberg lettuce finely chopped
  • 1 cup quinoa cooked
  • ½ cup chickpeas
  • ½ avocado sliced
  • 2 cups cucumbers spiralized
  • 1 cup carrots grated
  • 2 tbsp slivered almonds
  • 2 tbsp dried cranberries
  • 2 tbsp green onions chopped
  • 150 g turkey breasts cooked, sliced

Vinaigrette

  • ¼ cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • salt and pepper

Instructions

  • Place a nest of finely chopped Iceberg lettuce in a bowl.
  • Add cooked quinoa, chickpeas, avocado, cucumbers and carrots.
  • Sprinkle with slivered almonds, dried cranberries and green onions.
  • Top with slices of cooked turkey.
  • Mix all of the dressing ingredients together in a bowl.
  • Pour dressing over the power bowl and toss well.
