Ingredients  

For the breakfast sausage

  • 500 g ground turkey Canadian
  • 100 g bread stale bread soaked in 200ml of milk for 30 minutes and drained of excess milk
  • 1 egg
  • 2 tsp kosher salt
  • 1 tsp dried sage  
  • ½ tsp freshly cracked black pepper  
  • ½ tsp garlic powder
  • ½ tsp dried thyme
  • ½ tsp ginger powder
  • 1 pinch nutmeg

For the breakfast sauce

  • 2 tbsp mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp HP Sauce

To assemble

  • 4 tsp maple syrup Canadian
  • 4 brioche buns cut in half, insides lightly toasted in butter
  • 4 slices medium-aged cheddar cheese Canadian
  • 4 eggs cooked over-easy

Instructions

For the breakfast sausage:

  • To make the patties, combine all the ingredients in a bowl and mix very well with your hand. When it is properly emulsified, divide the mixture into four equal-sized balls and form into thin patties.

For the breakfast sauce:

  • Mix all the ingredients for the sauce together in a small bowl and set aside until assembling the sandwich.

To assemble:

  • Fry your patties in a little oil over medium-high heat. When they are golden brown on on side, flip them over. Add a slice of cheese on top of each patty; add the maple syrup to the pan, and let the maple syrup reduce and glaze the bottom of the patties. Make sure the syrup does not burn.
  • To assemble, put a tablespoon worth of sauce on the bottom of the bun, add your patty, and top with an egg. Cover the sandwich with the top of the bun and eat immediately.
