Ingredients  

Lemony Vinaigrette

  • cup olive oil
  • 3 tbsp fresh squeezed lemon juice
  • 1 tsp dried oregano
  • ¼ tsp salt and pepper each
  • 1 clove garlic very small, pressed
  • 1 pinch crushed red pepper flakes

Nourish Bowl

  • 2 cups turkey cooked cubed
  • 2 cups english cucumber sliced and quartered
  • 2 cups tomatoes halved grape
  • 2 cups sweet yellow pepper chopped
  • 2 cups barley cooked, brown rice or quinoa, optional
  • 1 cup chickpeas canned, drained and rinsed
  • cup crumbled feta cheese
  • ¼ cup red onion diced
  • 4 tbsp kalamata olives sliced

Instructions

Lemony Vinaigrette

  • In a small bowl, whisk together oil, lemon juice, salt, pepper, garlic and red pepper flakes. Set aside.

Nourish Bowl

  • Divide turkey, cucumber, tomatoes, pepper, rice and chickpeas among four bowls. Top with feta, onion and olives. Drizzle with lemony vinaigrette.

Tips & Tricks

Switch it up! Add all the ingredients (except cucumber) and the vinaigrette into a hot skillet and stir until heated through for a warm nourish bowl.
