Ingredients  

Power Bowl

  • 1 cob sweet corn
  • 1 cup brown rice
  • 200 g turkey strips cooked
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1 head butter leaf lettuce

Spicy yogurt sauce

  • ½ cup nonfat plain greek yogurt
  • 4 tbsp sweet chili sauce

Instructions

  • Cook corn on grill over medium heat for 12 minutes until lightly charred (turn after 6 minutes).
  • Cook 1 cup brown rice.
  • Slice cooked turkey strips into 1/2 inch pieces.
  • Cut tomatoes into halves.
  • Halve avocado, then cut into slices.
  • Shave corn off the cob.
  • Mix spicy yogurt sauce ingredients in a bowl until blended.
  • Add butter lettuce to the base of a bowl, then combine all ingredients and enjoy!
