Ingredients  

  • 1 package chickpea pasta 8 oz, cooked according to package instructions
  • 1 tsp olive oil
  • 3 turkey sausages meat removed from casing, I used spicy red pepper
  • cup fresh salsa prepared, spice preference is your choice
  • 2 limes zest and juice
  • cup cilantro chopped
  • 1 tsp salt

Instructions

  • Boil water for pasta and cook the pasta according to package directions.
  • Heat oil in a skillet on medium high heat and add the turkey sausage; cook for 10 minutes until the meat is cooked through. By this time the pasta should be ready.
  • Add the pasta, salsa, lime zest + pulp and cilantro leaves and season to taste.
  • Combine and serve hot.
