Ingredients Â
Turkey
- 500 g turkey roasted and shredded leftovers
Sauce
- 1 cup light feta cheese cubed
- ½ cup plain greek yogurt
- ½ cup kalamata olives pitted
- 1 lemon zest and juice
- 2 tbsp oregano dried
Salad
- 2 cups orzo cooked
- 1 yellow sweet pepper chopped
- 1 green bell pepper chopped
- 10 radishes chopped
- 1 small red onion chopped
- 2 tbsp dill chopped fresh
- 2 tbsp parsley chopped fresh
- 2 tbsp olive oil
Instructions

In a blender, combine all sauce ingredients. Puree until smooth to make a Greek-inspired dressing. Set aside.

In a large bowl, combine all salad ingredients. Season with salt and pepper and mix well to make an orzo salad.

In a 2nd bowl, place the shredded turkey and the dressing. Mix well to coat the turkey.

Serve orzo salad with pulled turkey in Greek-inspired dressing.
