Greek-inspired Orzo Salad

Ingredients
  

Turkey

  • 500 g turkey roasted and shredded leftovers

Sauce

  • 1 cup light feta cheese cubed
  • ½ cup plain greek yogurt
  • ½ cup kalamata olives pitted
  • 1 lemon zest and juice
  • 2 tbsp oregano dried

Salad

  • 2 cups orzo cooked
  • 1 yellow sweet pepper chopped
  • 1 green bell pepper chopped
  • 10 radishes chopped
  • 1 small red onion chopped
  • 2 tbsp dill chopped fresh
  • 2 tbsp parsley chopped fresh
  • 2 tbsp olive oil

Instructions
 

  • In a blender, combine all sauce ingredients. Puree until smooth to make a Greek-inspired dressing. Set aside.
  • In a large bowl, combine all salad ingredients. Season with salt and pepper and mix well to make an orzo salad.
  • In a 2nd bowl, place the shredded turkey and the dressing. Mix well to coat the turkey.
  • Serve orzo salad with pulled turkey in Greek-inspired dressing.

Notes

Now is the time to get to the vegetables that are hanging out in the fridge! Any crunchy vegetable will do. Feel free to customize the recipe to your liking!
