Ingredients  

Tacos

  • 1 ½ lbs turkey breasts
  • 12 corn tortilla shells 6″
  • 2 avocados diced
  • 4 radishes thinly sliced
  • 2 green onions thinly sliced
  • 1 bunch cilantro chopped
  • 3 limes cut into wedges
  • 1 cup salsa optional

Garlic Lime Sauce

  • â…“ cup lime juice
  • 2 tbsp coconut sugar
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • ½ tsp ground cumin
  • ½ tsp chili powder

Instructions

  • Mix all the sauce ingredients together in a bowl.
  • Place the turkey breast in an Instant Pot (or slow cooker) making sure to coat the turkey breast completely.
  • Cook turkey in the Instant Pot on Manual, High Pressure, for 30-minutes (or in the slow cooker on Low for 4-hours).
  • Once done, use a fork to shred the turkey breast then assemble the tacos.
  • Heat the taco shells and top each shell with â…“ cup of the shredded turkey (make sure it’s coated in the garlic lime sauce!).
  • Next top each taco with diced avocado, a few slices of radish, a sprinkle of green onion and chopped cilantro, a dollop of salsa (optional), and a squeeze of lime.
  • Enjoy!
