Ingredients
- 1½ cups leftover turkey or Granny’s boneless, skinless turkey breast, roasted and chopped
- 1 tbsp sesame oil
- 3 cups cooked rice leftover
- 1 cup frozen vegetable medley corn, peas, and green beans
- ¼ cup yellow onion chopped
- 1 tsp garlic minced
- 2 tbsp dark soy sauce
- 1 tbsp chinese cooking wine Shaoxing wine
- 2 large eggs whole, scrambled
- ¼ cup green onion chopped
Instructions

In a large frying pan, heat sesame oil over medium heat. Add day-old rice and onion. Heat up, breaking-up the rice.

Once onions are fragrant, add garlic and vegetables. Stir fry over medium-high heat for 3 minutes. Add sauce mixture and stir, ensuring rice is fully covered.

Add leftover Granny’s turkey and cook for an additional minute.

Create a well in fried rice and pour beaten egg. Scramble the egg as it cooks for 2 minutes or until solid, until solid. Break up into smaller pieces and mix throughout the rice and turkey mixture.
