Ingredients  

  • cups leftover turkey or Granny’s boneless, skinless turkey breast, roasted and chopped
  • 1 tbsp sesame oil
  • 3 cups cooked rice leftover
  • 1 cup frozen vegetable medley corn, peas, and green beans
  • ¼ cup yellow onion chopped
  • 1 tsp garlic minced
  • 2 tbsp dark soy sauce
  • 1 tbsp chinese cooking wine Shaoxing wine
  • 2 large eggs whole, scrambled
  • ¼ cup green onion chopped

Instructions

  • In a large frying pan, heat sesame oil over medium heat. Add day-old rice and onion. Heat up, breaking-up the rice.
  • Once onions are fragrant, add garlic and vegetables. Stir fry over medium-high heat for 3 minutes. Add sauce mixture and stir, ensuring rice is fully covered.
  • Add leftover Granny’s turkey and cook for an additional minute.
  • Create a well in fried rice and pour beaten egg. Scramble the egg as it cooks for 2 minutes or until solid, until solid. Break up into smaller pieces and mix throughout the rice and turkey mixture.
