Ingredients
- 1 whole wheat english muffins toasted
- 2 eggs poached
- 100 g extra lean turkey ham Butterball, sliced
- ⅓ cup spinach cooked
- 1 egg yolk
- 1 egg
- ½ lemon juiced
- 1 pinch paprika
- salt and pepper to taste
Instructions

In a greased grill pan, heat your Butterball Extra Lean Turkey ham over medium heat for 2-3 minutes per side or until warmed through. Set aside.

Make your ‘sabayon’ by whisking the yolk, egg, and lemon juice in a large bowl over a double boiler. Whisk constantly until thickened and doubled in volume, about 6-8 minutes.

Season with salt and pepper to taste.

Assemble by placing the cooked spinach on top of your toasted whole wheat English muffin.

Top with the grilled Turkey ham, followed by the poached eggs, then lastly with the sabayon.

Garnish with a pinch of paprika and serve with a side of fruit and hot coffee. Serve to Mom and do the dishes after too!
