Healthy Mother's Day Benny w/ Butterball Turkey Ham

Ingredients
  

  • 1 whole wheat english muffins toasted
  • 2 eggs poached
  • 100 g extra lean turkey ham Butterball, sliced
  • cup spinach cooked
  • 1 egg yolk
  • 1 egg
  • ½ lemon juiced
  • 1 pinch paprika
  • salt and pepper to taste

Instructions
 

  • In a greased grill pan, heat your Butterball Extra Lean Turkey ham over medium heat for 2-3 minutes per side or until warmed through.  Set aside.
  • Make your 'sabayon' by whisking the yolk, egg, and lemon juice in a large bowl over a double boiler.  Whisk constantly until thickened and doubled in volume, about 6-8 minutes.
  • Season with salt and pepper to taste.
  • Assemble by placing the cooked spinach on top of your toasted whole wheat English muffin.
  • Top with the grilled Turkey ham, followed by the poached eggs, then lastly with the sabayon.
  • Garnish with a pinch of paprika and serve with a side of fruit and hot coffee.  Serve to Mom and do the dishes after too!
