Ingredients  

  • 1 turkey carcass most of the meat removed
  • 25 cups water
  • 2 onions quartered
  • 3 large carrots cut into 4 pieces
  • 3 stalks celery halved lengthwise
  • 1 tbsp Italian seasoning
  • 2 bay leaves
  • 2 cloves garlic minced

Instructions

  • Place all of the ingredients in a large soup or stock pot.
  • Bring to a boil over medium-high heat, then reduce heat to medium-low, cover and simmer for as little as 1 hour or up to 4 hours. The longer it simmers, the more flavor it will have.
  • Let cool slightly and strain.
  • Use immediately to make soup, or store in the refrigerator for several days or freezer up to 3 months.
