Place all of the ingredients in a large soup or stock pot.
Bring to a boil over medium-high heat, then reduce heat to medium-low, cover and simmer for as little as 1 hour or up to 4 hours. The longer it simmers, the more flavor it will have.
Let cool slightly and strain.
Use immediately to make soup, or store in the refrigerator for several days or freezer up to 3 months.
