Turkey Steaks with Chimichurri

Ingredients
  

  • 1 whole turkey roast frozen Butterball
  • 1 shallot finely chopped
  • ½ tsp parsley finely chopped
  • ½ tsp cilantro finely chopped
  • ¼ tsp mint finely chopped
  • 1 tbsp oregano
  • ¼ cup red wine vinegar
  • ¼ cup olive oil
  • 3 cloves garlic finely minced

Instructions
 

  • Preheat your oven or grill to F (162 C).
  • Cook your roast for 2.5 hours, then remove and rest for 10 minutes.
  • Slice into 1" steaks.  Cook on a medium/high grill for 4-5 minutes per side to achieve golden brown grill marks, then set aside.
  • While the turkey steaks rest, combine the shallot, parsley, cilantro, mint, oregano, red wine vinegar, olive oil, and garlic in a mixing bowl.  Season with salt and pepper to taste.
  • Spoon on to the steaks and serve with grilled potatoes and salad.
