Turkey Patty Breakfast Sandwich

Ingredients
  

  • 1 tsp vegetable oil
  • 3 eggs
  • Salt and pepper to taste
  • 250 g ground turkey
  • 2 slices cheddar cheese
  • 2 English muffins
  • 4 tbsp basil mayonnaise
  • bunch romaine lettuce leaves separated
  • 1 tomatoes thinly sliced
  • 70 g feta cheese

Instructions
 

  • Heat a drizzle of oil in a pan over medium heat.
  • Whisk the eggs together then pour into the pan. Cook for 3-4 minutes. Add salt and pepper. Remove from the pan.
  • Make 1 patty per person with the ground turkey. Add the patties to the pan and cook 3-4 minutes on each side over medium high heat.
  • Turn off the heat. Add the cheddar cheese on top of each patty, cover and let melt for about 2 minutes.
  • Toast the English muffins. Garnish with the mayonnaise, lettuce, tomato slices, feta cheese, eggs and turkey patty.
