Turkey Chili Nachos

Ingredients
  

Chili

  • 1 onion chopped
  • 1 turkey breast cut into pieces, approx. 1 lb
  • 1 can diced tomatoes 411 mL, drained
  • 1 can Aylmer spicy red peppers 540 mL, drained
  • 1 can tomato sauce 680 mL
  • 1 tbsp brown sugar
  • lime juice of ½ lime
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp chili pepper
  • 1 can red kidney beans 540 mL, rinsed and drained
  • 1 cup corn kernels frozen

Nachos

  • 1 bag corn tortilla chips
  • 1 cup mozzarella cheese
  • ½ cup sour cream
  • ½ green onion sliced

Instructions
 

Chili

  • In a skillet over medium-high heat, add the onion, and cook until translucent
  • Add the turkey pieces and sauté until the meat is browned (approx. 10 minutes)
  • Add all other ingredients except the can of beans and corn and simmer for 30 minutes over medium heat.
  • Add the beans and the corn and let simmer for another 10 minutes.

Nachos

  • Place the tortilla chips in a baking dish and spoon the chili on top.
  • Add the mozzarella cheese and broil for 1 minute.
  • Serve with sour cream and green onions.
