Turkey and Vegetable Stir Fry

Ingredients
  

For the turkey:

  • 1 lb turkey breast thinly sliced
  • 1 tbsp corn starch
  • 1 tbsp soy sauce

For the stir fry:

  • 2 tbsp neutral oil such as safflower or grapeseed
  • 4 garlic cloves thinly sliced
  • 2 inch ginger cut into matchsticks
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • ½ tsp sugar substitute: honey
  • 1 handful broccoli florets smaller is better
  • 1 handful snow peas
  • ½ red pepper cut into bite size pieces

Instructions
 

  • 30 minutes before you want to begin cooking, marinate the turkey with cornstarch and soy sauce
  • When ready to stir fry, put a pan over medium-high heat and add the oil. When the oil begins to smoke add the garlic and ginger, stirring vigorously. Cook until fragrant, about 20-30 seconds.
  • Now, add the turkey breast and stir fry until the turkey breast is 50% cooked. Then add the rest of your ingredients. Turn the temperature to high, and continuously stir until vegetables are cooked through but still have crunch. By that time your turkey should also be done. Serve immediately with steamed rice.

Serve with steamed rice or any other side!
