One-Pot Turkey Lasagna

Ingredients
  

  • 1 lb lean ground turkey Granny’s
  • ½ cup yellow onion diced
  • 1 tsp salt
  • ½ tsp freshly cracked black pepper  
  • 1 tsp garlic minced
  • 1 ½ cups canned crushed tomatoes
  • 1 tbsp Italian seasoning
  • 2 cups turkey stock
  • 1 cup water
  • ½ box uncooked lasagna noodles roughly 10 noodles, broken in thirds
  • 1 cup spinach roughly chopped
  • 1 cup shredded mozzarella cheese
  • ¼ cup fresh parsley roughly chopped

Instructions
 

  • In a large skillet or medium pot, brown turkey with onions. Season with salt and pepper. Cook until lightly browned and cooked through, about 8-10 mins. Add garlic.
  • Add crushed tomatoes and spices and stir to incorporate.
  • Add turkey broth and water Cook for an additional 2 minutes.
  • Add lasagna noodles and mix into sauce. Cook over medium high for about 20 minutes or until noodles are al dente.
  • Reduce heat and stir-in spinach. Remove from heat and top with cheese and parsley. Serve immediately.
